Matamoros Beef & Cheese Omelet SandwichJuly 11, 2016
8 ea. Flour tortilla, 8 in.
8 ea. Eggs
1/2 cup Milk
1 Tbsp. Butter
12 oz. Green peppers, diced
Salt to taste
12 oz. Onions, diced
4 oz. Black beans, cooked
3 Tbsp. TABASCO® brand Chipotle Sauce
8 oz. Cheddar cheese, shredded
4 Tbsp. Sour cream
1.Melt butter in saucepan and sauté onions and peppers for 2-3 minutes. Add black beans, TABASCO® brand Chipotle Sauce, and salt. Return to a simmer, mix well, and remove from heat.
2. Mix eggs and milk together and scramble.
3. Warm tortillas on grill and divide egg mixture between tortillas. Top eggs with 2 Tb black bean/pepper/onion mixture.
4. Add 2 Tbsp cheddar and ½ Tb sour cream to each wrap and fold.
