1/2 tsp. Black pepper, ground
1 tsp. Salt
4 Tbsp. Cilantro, chopped
3 Tbsp. Garlic, granulated
1 lb. Butter, softened
26 oz. Corn muffin mix, dry
3 ea. Eggs, large
2-1/4 cups Milk, whole
6 Tbsp. Butter, clarified
2 Tbsp. TABASCO® brand Green Jalapeño Pepper Sauce
1. Add black pepper, salt, cilantro and garlic to softened butter. Mix; reserve cool for service.
2. In medium-size bowl, place remaining ingredients. Mix well.
3. Grease hot griddle 325°F-350°F. Ladle 4-oz. portions onto griddle. Flip when top is full of bubbles.
4. When cakes are done, serve with side of cilantro garlic butter.
