Bacon, Arugula, Tabasco®-Chipotle, Tomato And Egg Breakfast Sandwich
7 ea. Large eggs (or 1-3/4 cup egg whites)
Salt and pepper to taste
2 ea. Tomatoes, sliced
5 Tbsp. TABASCO® brand Chipotle Pepper Sauce
2 Tbsp. Olive oil
8 slices Sourdough bread, toasted
12 slices Turkey bacon, cooked
12 leaves/sprigs Arugula leaves or watercress sprigs, coarse stems discarded
1. Whisk together eggs and season with salt and pepper.
2. Marinate tomato slices in TABASCO® Chipotle Pepper Sauce.
3. Heat olive oil in skillet, then cook egg mixture, stirring slowly, until just cooked through.
4. Make sandwiches with toasts, scrambled eggs, bacon and arugula.
